Air Fryer Chicken Cutlets: Golden and Crispy in 15 Minutes
These air fryer chicken cutlets come out golden and crunchy on the outside and juicy inside in about 15 minutes, with a light spray of oil instead of a pan of hot oil. Thin chicken cutlets get the classic three-step breading (flour, egg, then a panko and Parmesan crust) and cook in a single layer at 400°F. Serve them with lemon and a salad, tuck them into sandwiches, or turn them into a quick chicken Parmesan.
Below you’ll find how to cut your own cutlets, the ingredients, step-by-step instructions, the cooking time chart, tips for extra-crispy breading, variations, storage and FAQs. The printable recipe card is at the bottom.

Why You’ll Love These Air Fryer Chicken Cutlets
- Fast. Thin cutlets cook in 8 to 10 minutes, so dinner is on the table in about 30 minutes, start to finish.
- Crispy without frying. Toasted panko and a little oil give you the crunch of breaded chicken cutlets without a skillet full of oil or the splatter.
- Juicy every time. Even, thin pieces cook through before they can dry out.
- Meal-prep friendly. They reheat well in the air fryer, so a batch covers sandwiches and salads for days.
Ingredients for Breaded Chicken Cutlets
- Boneless, skinless chicken breasts, 2 large (about 1½ lb / 680 g), or 1½ lb store-bought thin-sliced cutlets.
- All-purpose flour, ⅓ cup (40 g).
- Large eggs, 2, beaten with 1 tablespoon water.
- Panko breadcrumbs, 1 cup (60 g). Panko is lighter and crunchier than regular breadcrumbs.
- Parmesan, ½ cup (45 g), finely grated.
- Diamond Crystal kosher salt, 1 teaspoon, or ½ teaspoon table salt, divided.
- Garlic powder, 1 teaspoon, and paprika, 1 teaspoon.
- Dried Italian seasoning, 1 teaspoon, and black pepper, ½ teaspoon.
- Olive oil, 1 tablespoon, plus oil spray.
- Lemon wedges and chopped parsley, to serve.
Equipment You Need
- An air fryer (basket or oven style). Times below are for a basket air fryer of about 5 to 6 quarts.
- A sharp knife and cutting board for slicing the breasts.
- A meat mallet or rolling pin and plastic wrap or a zip-top bag for pounding.
- Three shallow dishes for the breading station.
- An instant-read thermometer.
- Oil mister or spray bottle (avoid aerosol sprays with propellants on nonstick baskets; they can damage the coating).
How to Make Chicken Cutlets From Chicken Breasts
A chicken cutlet is simply a thin, even slice of chicken breast, about ¼ to ½ inch (6 to 12 mm) thick. Store-bought cutlets are handy but cost more, and making your own takes 5 minutes:
- Lay a chilled breast flat on the board. Press your hand on top and slice it in half horizontally, like opening a book, to make 2 thin pieces.
- Place the pieces between sheets of plastic wrap or in a zip-top bag and gently pound the thicker parts until the whole piece is an even ½ inch thick.
Two large breasts give you 4 cutlets. Even thickness is the single most important step, because it lets every piece finish cooking at the same time.
How to Make Air Fryer Chicken Cutlets (Step by Step)
1. Season the chicken
Pat the cutlets dry with paper towels and season both sides with half the salt and a little pepper.
2. Set up the breading station
Put the flour in the first dish. Beat the eggs and water in the second. In the third, mix the panko, Parmesan, garlic powder, paprika, Italian seasoning, the rest of the salt and the pepper, then drizzle in the olive oil and rub it in with your fingers until the crumbs are lightly coated. This little bit of oil is what makes the coating turn golden in the air fryer.
3. Bread the cutlets
Coat each cutlet in flour and shake off the excess, dip it in the egg and let the extra drip off, then press it firmly into the panko mixture on both sides. Use one hand for the wet dish and the other for the dry ones to avoid “club fingers.” Set the breaded cutlets on a rack or plate.

4. Preheat the air fryer
Preheat the air fryer to 400°F (200°C) for 3 to 5 minutes. A hot basket helps the bottom crisp up.
5. Air fry
Lightly spray the basket and arrange the cutlets in a single layer without overlapping (work in batches if needed). Spray the tops lightly. Air fry for 5 minutes, flip, spray any dry spots, and cook 3 to 5 minutes more, until deep golden and the thickest part reaches 165°F (74°C).
6. Rest and serve
Rest the cutlets on a rack for 2 to 3 minutes so the bottoms stay crisp. Serve with lemon wedges and parsley. Keep the first batch warm in a 200°F oven while you cook the second.
Air Fryer Chicken Cutlet Cooking Times
| Cutlet thickness | Temperature | Approximate time |
|---|---|---|
| ¼ inch (6 mm) | 400°F (200°C) | 7 to 8 minutes, flipping halfway |
| ½ inch (12 mm) | 400°F (200°C) | 8 to 10 minutes, flipping halfway |
| ¾ inch (2 cm) | 380°F (195°C) | 12 to 14 minutes, flipping halfway |
| Frozen breaded, homemade | 380°F (195°C) | 14 to 16 minutes, flipping halfway |
Air fryers vary in power, so start checking a couple of minutes early. Chicken is safe at 165°F (74°C), per the FoodSafety.gov safe minimum temperature chart. Thin cutlets are hard to check, so slide the thermometer in from the side into the thickest part.
Tips for Extra-Crispy Cutlets
- Oil the crumbs, not just the chicken. Panko won’t brown in dry air alone. Rubbing the crumbs with a tablespoon of oil gives an even golden color.
- Don’t crowd the basket. Hot air needs to reach every side. Overlapping pieces steam and stay pale.
- Press the crumbs on. Firm pressure keeps the coating from blowing off or sliding off when you flip.
- Let breaded cutlets sit for 10 minutes before cooking if you have time. The coating sets and sticks better.
- Season every layer. A pinch of salt on the chicken and in the crumbs gives far better flavor than salting at the end.
- Keep raw chicken separate. Wash your hands, board and knife with hot, soapy water after handling raw chicken, and don’t rinse the chicken in the sink.
Easy Variations and Substitutions
- Chicken Parmesan: after cooking, top each cutlet with 2 tablespoons marinara and a slice of mozzarella and air fry 1 to 2 minutes more, until melted.
- Italian breadcrumbs: swap the panko for seasoned breadcrumbs and skip the Italian seasoning. The coating will be finer and slightly less crunchy.
- Gluten-free: use a 1:1 gluten-free flour and gluten-free panko or crushed cornflakes.
- Dairy-free: leave out the Parmesan and add an extra ¼ cup panko and ½ teaspoon salt-free seasoning.
- Spicy: add ½ teaspoon cayenne to the crumbs and a dash of hot sauce to the egg.
- Turkey or pork: thin turkey breast cutlets cook the same way to 165°F; thin boneless pork cutlets cook to 145°F with a 3-minute rest.
- No air fryer: bake on an oiled rack over a sheet pan at 425°F (220°C) for 15 to 18 minutes, flipping once.
What to Serve With Chicken Cutlets
- A simple arugula salad with lemon and Parmesan
- Mashed potatoes, roasted potatoes or air fryer fries
- Pasta with marinara or garlic butter
- Sliced in a sandwich roll with lettuce, tomato and mayo, or with pesto and mozzarella
- Steamed green beans or roasted broccoli

How to Store, Freeze and Reheat
- Refrigerate cooked cutlets within 2 hours in an airtight container for 3 to 4 days.
- Freeze cooked cutlets in a single layer until firm, then bag them, for up to 4 months for best quality.
- Freeze raw breaded cutlets the same way and cook them from frozen (see the chart). Don’t thaw them first or the coating gets soggy.
- Reheat in the air fryer at 375°F (190°C) for 3 to 5 minutes, or 6 to 8 minutes from frozen, until hot and 165°F (74°C) inside. The microwave works but softens the crust.
These times follow the FoodSafety.gov cold food storage chart.
Air Fryer Chicken Cutlets FAQs
How long do you cook chicken cutlets in the air fryer?
About 8 to 10 minutes at 400°F for ½-inch cutlets, flipping halfway, until they reach 165°F inside. Thinner cutlets take 7 to 8 minutes.
Do I need to flip chicken cutlets in the air fryer?
Yes. Flipping halfway lets both sides brown evenly, since the bottom gets less direct heat.
Why is my breading falling off?
The chicken was wet, the flour layer was skipped, or the crumbs weren’t pressed on. Pat the chicken dry, use all three steps, press firmly, and flip gently with tongs or a thin spatula.
Why is my breading pale?
The crumbs had no oil. Rub the panko with oil before breading, and spray any dry spots after flipping.
Can I use thin-sliced chicken breast from the store?
Yes. Check that the pieces are even, and pound any thick ends. Cook them for 7 to 9 minutes.
