Air Fryer Chicken Thighs in 25 Minutes (Crispy Skin)

Bone-in, skin-on thighs are the best thing you can put in an air fryer. The fast-moving hot air renders the fat under the skin and turns it thin and crackly, while the dark meat underneath stays juicy, even if you leave it in a minute or two longer than planned. This chicken thigh air fryer recipe needs about 25 minutes of cooking, one bowl, and a simple garlic-paprika rub with a pinch of baking powder for extra-crisp skin.

Below you’ll find the full method for bone-in thighs, a time and temperature chart, a section on boneless skinless thighs, and the safe internal temperature from USDA. The printable recipe card is at the bottom of the page.

Why You’ll Love These Air Fryer Chicken Thighs

  • Crispy skin without deep frying. The thighs cook in their own rendered fat, so you only need 2 teaspoons of oil for the whole batch.
  • Fast. About 5 minutes of prep and 20 to 25 minutes in the basket.
  • Forgiving. Thighs have more fat and connective tissue than breasts, so they stay moist even when cooked well past the minimum safe temperature.
  • Budget friendly. Bone-in thighs are usually one of the least expensive cuts of chicken at the store.
  • Easy cleanup. No oil splatter on the stove and no sheet pan to scrub.

Ingredients for Air Fryer Chicken Thighs

  • Bone-in, skin-on chicken thighs, 6 (about 2¼ lb / 1 kg). Medium thighs of 5 to 7 oz (140 to 200 g) each cook most evenly. Very large thighs need a few extra minutes.
  • Olive oil or avocado oil, 2 teaspoons (10 ml). Just enough to help the seasoning stick.
  • Diamond Crystal kosher salt, 1¼ teaspoons (4 g). If you use Morton kosher salt or table salt, use ¾ teaspoon, since they are denser.
  • Baking powder, ½ teaspoon (2 g), optional. Aluminum-free baking powder helps the skin dry out and brown more deeply. Do not swap in baking soda, which tastes soapy in this amount.
  • Garlic powder, 1 teaspoon (3 g).
  • Sweet paprika, 1 teaspoon (2 g), for color and mild flavor.
  • Dried oregano, ½ teaspoon.
  • Black pepper, ½ teaspoon.
  • Cayenne pepper, ¼ teaspoon, optional, for gentle heat.
  • To serve: lemon wedges and chopped fresh parsley.

Equipment You Need

  • A basket-style or oven-style air fryer, ideally 5 quarts (4.7 L) or larger so 6 thighs fit in one layer. With a smaller basket, cook in two batches.
  • An instant-read thermometer. It is the only reliable way to know chicken is done.
  • Paper towels, a mixing bowl and tongs.

How to Make Chicken Thighs in the Air Fryer (Step by Step)

1. Dry the thighs

Pat the chicken thighs very dry with paper towels on both sides. Trim any large flaps of skin or fat that hang past the edge of the meat. Moisture is the enemy of crisp skin, so do not skip this step. There is no need to rinse raw chicken first; USDA advises against it, because splashing water can spread bacteria around the sink and counter.

2. Season

Stir the salt, baking powder, garlic powder, paprika, oregano, pepper and cayenne together in a small bowl. Put the thighs in a large bowl, drizzle with the oil and toss to coat. Sprinkle the seasoning over the chicken and rub it in on all sides, including under the loose edges of the skin. If you have time, set the seasoned thighs on a rack over a plate, uncovered, in the fridge for 1 hour or up to overnight. The skin dries further and crisps even better.

3. Preheat the air fryer

Preheat the air fryer to 380°F (195°C) for 3 to 5 minutes, or use your model’s preheat setting. A hot basket gives the skin a head start.

4. Cook skin side down first

Place the thighs skin side down in a single layer with a little space between them. Air fry for 12 minutes. Starting this way cooks the meaty underside first and starts rendering the fat, so the skin can finish facing the heating element, where it crisps best.

5. Flip and crisp the skin

Turn the thighs skin side up. Raise the temperature to 400°F (200°C) and air fry for 8 to 12 minutes more, until the skin is deep golden brown, crisp and pulling back slightly at the edges.

6. Check the temperature

Insert a thermometer into the thickest part of the largest thigh, not touching the bone. USDA’s safe minimum internal temperature for all poultry is 165°F (74°C). Thighs are safe at that point, but many cooks prefer to take them to 175 to 185°F (79 to 85°C), because the extra heat softens connective tissue and makes dark meat more tender. The meat right next to the bone can look slightly pink even when it is fully cooked, so trust the thermometer, not the color.

7. Rest and serve

Move the thighs to a plate or rack and rest them for 5 minutes. Do not cover them with foil, which traps steam and softens the skin. Squeeze over some lemon and scatter with parsley just before serving.

Chicken Thigh Air Fryer Times and Temperatures

Every air fryer runs a little differently, so use this chicken thigh air fryer chart as a starting point and confirm doneness with a thermometer.

All of these finish at a minimum of 165°F (74°C). See the FoodSafety.gov safe minimum internal temperature chart for other meats.

How to Air Fry Boneless Skinless Chicken Thighs

The same chicken thigh air fryer method works for boneless skinless thighs. They will not give you crackly skin, but they cook even faster and the edges caramelize nicely. They are great sliced for tacos, rice bowls, wraps and salads.

  1. Pat 1½ lb (680 g) boneless skinless thighs dry and toss with 1½ teaspoons oil.
  2. Season with the same rub. Skip the baking powder, since there is no skin to crisp.
  3. Lay the thighs flat in a single layer, tucking any thin ends underneath so they cook evenly.
  4. Air fry at 400°F (200°C) for 12 to 16 minutes, flipping halfway, until the thickest piece reads 165°F (74°C).
  5. Rest 3 to 5 minutes before slicing.

A 4 oz (113 g) raw boneless skinless thigh comes to roughly 155 calories cooked, based on USDA values for roasted thigh meat. That is an estimate; brands and trimming vary.

Tips for the Best Air Fryer Chicken Thighs

  • Do not crowd the basket. This is the most important chicken thigh air fryer rule. The hot air needs to move around each piece. Thighs that touch steam instead of crisp.
  • Dry skin is crisp skin. Pat the chicken dry, and if you can, let it rest uncovered in the fridge after seasoning.
  • Use the baking powder. A small amount raises the pH of the skin, which helps it brown and blister. You will not taste it.
  • Empty the drip tray if needed. Bone-in thighs release a lot of fat. In some models, a pool of fat under the basket can smoke. Pour it off carefully after flipping.
  • Size matters. Pick thighs of a similar size so they finish at the same time, or pull smaller ones out early.
  • Wash up after raw chicken. Clean the bowl, tongs and any surface the raw chicken touched with hot, soapy water.

Easy Variations and Substitutions

Different seasonings

  • Lemon pepper: replace the paprika and oregano with 1½ teaspoons lemon pepper seasoning, and reduce the salt to ¾ teaspoon if your blend is salted.
  • Cajun: use 2 teaspoons Cajun seasoning in place of the paprika, oregano and cayenne. Check the salt in your blend.
  • Your own blend: our homemade chicken seasoning works well here. Use about 2½ teaspoons for 6 thighs.

Honey garlic glaze

Stir together 2 tablespoons honey, 1 tablespoon soy sauce and 1 minced garlic clove. Brush it over the skin during the last 2 to 3 minutes of cooking. Sugar burns quickly, so watch the thighs closely once the glaze goes on.

Drumsticks or a mix of dark meat

Drumsticks follow a similar schedule but can take a few minutes longer. Turn them every 8 minutes or so for even browning, and cook to at least 165°F.

Prefer the oven? Our oven roasted chicken thighs use the same idea at 425°F and let you cook 8 at once. For a stovetop option, see these boneless skinless chicken thigh recipes.

What to Serve With Air Fryer Chicken Thighs

  • Roasted or mashed potatoes, or potato wedges
  • Rice pilaf, or a quick 5-ingredient fried rice
  • A crisp green salad or coleslaw
  • Steamed green beans, broccoli or roasted carrots
  • Warm flatbread with a garlicky yogurt sauce

How to Store, Freeze and Reheat

  • Refrigerate leftovers within 2 hours of cooking, in a shallow covered container, and eat them within 3 to 4 days.
  • Freeze cooled thighs in an airtight bag or container for about 2 to 3 months for best quality. Thaw overnight in the fridge.
  • Reheat in the air fryer at 375°F (190°C) for 4 to 8 minutes, until the center reaches 165°F (74°C). The skin crisps up again, which the microwave cannot do.

These times follow the FoodSafety.gov cold food storage chart.

Chicken Thigh Air Fryer FAQs

How long do bone-in chicken thighs take in the air fryer?

With the chicken thigh air fryer method above, medium bone-in, skin-on thighs take about 20 to 25 minutes: 12 minutes skin side down at 380°F, then 8 to 12 minutes skin side up at 400°F. Always check that the thickest part has reached at least 165°F.

What temperature should I air fry chicken thighs at?

380°F to 400°F works best. Starting at 380°F cooks the meat through without scorching the outside, and finishing at 400°F crisps the skin.

Do I need to flip chicken thighs in the air fryer?

Yes, once. Starting skin side down and flipping halfway gives evenly cooked meat and the crispiest skin. Boneless thighs should also be flipped halfway.

Do I need to preheat the air fryer?

It is not essential, but preheating for 3 to 5 minutes gives crispier skin and more predictable timing. If you skip it, add 2 to 3 minutes to the cook time.

Can I cook frozen chicken thighs in the air fryer?

Yes. USDA notes that meat can be cooked from frozen, but it takes about 50 percent longer. Separate the pieces as soon as they thaw enough, season them partway through, and cook until they reach 165°F. Thawing first gives better texture and crispier skin.

Why is my chicken thigh skin not crispy?

The usual causes are wet skin, a crowded basket, or not enough time skin side up. Dry the thighs well, leave space between them, and give them a few more minutes at 400°F.

How many chicken thighs fit in an air fryer?

A 5- to 6-quart basket usually fits 4 to 6 medium thighs in a single layer. Smaller baskets fit 3 or 4, so cook in batches and keep the first batch warm in a 200°F oven.
