What Is Buffalo Chicken Dip?

Buffalo chicken dip, also called chicken wing dip, takes everything people love about Buffalo wings and turns it into a warm party dip. The classic version has five parts: cooked chicken, cream cheese, a cayenne pepper hot sauce, ranch or blue cheese dressing, and shredded cheese. The hot sauce gives the tangy, vinegary heat of wings, the cream cheese and dressing make it rich and cool it down, and the cheese melts into a golden top.

Because it uses cooked chicken, it’s one of the fastest hot appetizers you can make, and it’s endlessly flexible: bake it, keep it warm in a slow cooker, stir it together on the stove or turn it into a sandwich filling. If you love these flavors, our buffalo chicken wrap uses the same sauce in a quick lunch.

Ingredients for Buffalo Chicken Dip

  • Cooked chicken (2 cups shredded / about 10 oz / 280 g). A rotisserie chicken gives the best flavor and is the easiest: one bird yields about 3 to 4 cups. Leftover roasted, poached or smoked chicken all work. See the table below for other options.
  • Cream cheese (8 oz / 226 g), softened. Full-fat block cream cheese gives the creamiest, most stable dip. Soften it on the counter for 30 to 60 minutes, or microwave the unwrapped block for 15 seconds.
  • Cayenne pepper hot sauce (½ cup / 120 ml). The classic Buffalo-style sauce is a vinegary cayenne sauce, such as Frank’s RedHot Original. Don’t swap in a thick wing sauce with butter unless you reduce the ranch, and avoid very hot sauces like habanero unless you want serious heat.
  • Ranch dressing (½ cup / 120 ml). Cool, herby and creamy. Blue cheese dressing is the traditional wing partner; see the comparison below.
  • Shredded cheddar (1½ cups / 170 g), divided. One cup goes into the dip and ½ cup on top. Sharp cheddar, Monterey Jack, mozzarella or a mix all work.
  • Toppings (optional). Sliced green onions, crumbled blue cheese, a drizzle of extra hot sauce and a little chopped celery for crunch.

How to Make Buffalo Chicken Dip in the Oven

  1. Heat the oven. Heat the oven to 350°F (175°C) and lightly grease a 1½-quart baking dish, a 9-inch pie plate or an 8×8-inch dish.
  2. Make the base. In a large bowl, beat the softened cream cheese with a spatula or hand mixer until smooth. Gradually stir in the hot sauce and ranch dressing until creamy with no lumps. Adding the liquids slowly prevents lumps.
  3. Add the chicken and cheese. Fold in the shredded chicken and 1 cup of the cheddar.
  4. Top. Spread the dip in the dish and scatter the remaining ½ cup of cheese over the top.
  5. Bake. Bake 20 to 25 minutes, until bubbling at the edges and the center is hot, 165°F (74°C) on an instant-read thermometer. For a browned top, broil 1 to 2 minutes at the end and watch it closely.
  6. Finish. Let it stand 5 minutes, then top with green onions, a drizzle of hot sauce and crumbled blue cheese if you like. Serve warm.

Tips for a creamy, not greasy, dip

  • Use block cream cheese, not whipped or tub-style, which can separate in the oven.
  • Shred your own cheese from a block for the smoothest melt.
  • Don’t overbake. Once it bubbles, take it out. Long baking makes the cheese and cream cheese release their fat.
  • Shred the chicken finely. Small shreds make the dip easier to scoop without breaking chips.

Chicken Wing Dip in the Crockpot

For parties, a slow cooker chicken wing dip is the way to go: it cooks hands-off and stays warm for hours on the buffet.

  1. Cut the cream cheese into cubes and add it to a 2- to 4-quart slow cooker with the hot sauce, ranch, chicken and all 1½ cups of cheese.
  2. Cover and cook on LOW for 2 hours (or HIGH for 1 hour), stirring after the first hour, until melted, smooth and 165°F (74°C).
  3. Stir well, top with green onions, and switch to WARM for serving. Stir every 30 minutes or so.
  • Doubling it? Use a 4- to 6-quart slow cooker and add 30 to 60 minutes on LOW.
  • Too thick after a few hours? Stir in a splash of milk or more hot sauce.
  • Use a small cooker for a single batch. In a large one, the thin layer of dip can scorch at the edges.

Stovetop and Air Fryer Buffalo Chicken Dip

Stovetop (10 minutes)

Warm the cream cheese, hot sauce and ranch in a medium saucepan over medium-low heat, stirring until smooth, about 3 minutes. Stir in the chicken and 1 cup of cheese and cook, stirring, until hot and melted, 5 to 7 minutes more. Transfer to a bowl and top with the remaining cheese, which will melt from the heat of the dip, or run it under the broiler in an oven-safe dish.

Air fryer (12 minutes)

Spread the dip in a small oven-safe dish that fits your air fryer basket, about 6 to 7 inches across. Cook at 350°F (175°C) for 10 to 12 minutes, until bubbling with a golden top. Air fryers brown cheese quickly, so check at 8 minutes and cover loosely with foil if it’s browning before the center is hot.

How to Make Buffalo Chicken Dip Hotter or Milder

The recipe as written is medium: noticeable heat, but most guests can handle it. Taste the base before adding the chicken and adjust.

  • Milder: use â…“ cup hot sauce and add 2 more ounces of cream cheese or ¼ cup sour cream. Serve with cool celery and cucumber.
  • Hotter: add 1 to 2 more tablespoons of hot sauce, ¼ teaspoon cayenne, a minced jalapeño, or a few drops of a habanero sauce.
  • Smoky: add 1 minced chipotle in adobo or ½ teaspoon smoked paprika.
  • Kid-friendly: make a small separate batch with 2 tablespoons hot sauce and ¼ cup barbecue sauce.

Buffalo Chicken Dip Variations

Lighter buffalo chicken dip

Use reduced-fat cream cheese (Neufchâtel), swap the ranch for plain Greek yogurt with ½ teaspoon each of dried dill and garlic powder, and use 1 cup of part-skim mozzarella. Serve with vegetables instead of chips.

Bacon buffalo chicken dip

Fold in 4 slices of crisp, crumbled bacon and sprinkle more on top after baking.

Buffalo chicken dip without ranch

Replace the ranch with ½ cup of sour cream plus ½ teaspoon each of garlic powder, onion powder and dried dill.

Buffalo chicken dip sandwiches and sliders

Leftover dip makes a great filling: spread it on slider buns, top with cheese and bake until melted, or stuff it into a tortilla for a quick wrap. For a crispy wing-style dinner, try our Korean fried chicken.

What to Serve With Buffalo Chicken Dip

  • Chips and crackers: sturdy tortilla chips, pita chips, bagel chips, Fritos Scoops or buttery crackers.
  • Vegetables: celery sticks are the classic, plus carrot sticks, bell pepper strips, cucumber rounds and endive leaves.
  • Bread: toasted baguette slices, soft pretzel bites or warm pita wedges.
  • A spread for game day: pair it with a cold dip like our salmon dip and some hot wings for a full appetizer table.

How Much Buffalo Chicken Dip to Make for a Party

As one of several appetizers, plan on about â…“ cup of dip per person. If it’s the main snack, as it often is on game day, plan on ½ cup. This table scales the recipe from a small get-together to a big crowd.

30 to 4048 cups32 oz2 cups6 cupsTwo 9×13 dishes, or one bakes while the other waits in the fridge

One rotisserie chicken gives 3 to 4 cups of meat, enough for about 2 batches. You’ll need roughly 1½ to 2 cups of chips or 1 cup of vegetables per person.

Game-day timeline

  • The day before: shred the chicken and mix the dip without the top cheese; cover and refrigerate. Cut celery and carrot sticks and store them in cold water in the fridge so they stay crisp.
  • 1 hour before guests arrive: take the dip out of the fridge to lose its chill, and heat the oven.
  • 30 minutes before: add the cheese and bake. In a slow cooker, start 2½ hours before, then hold on WARM.
  • During the party: keep a second, unbaked dish in the fridge and bake it when the first runs low, instead of topping up a half-eaten dish.

Gluten-free and dairy notes

Most buffalo chicken dip ingredients are naturally gluten-free, but check the labels on the ranch dressing, hot sauce and pre-shredded cheese, which sometimes contain wheat-based thickeners or anti-caking agents. Serve it with corn tortilla chips or vegetables for a gluten-free spread. This dip relies on dairy for its texture, so dairy-free cream cheese, dressing and shreds work but give a looser, less stretchy result; add an extra spoonful of the cream cheese alternative to help it hold together.

Make-Ahead, Storage and Food Safety

  • Make ahead: mix the dip (without the top cheese), cover and refrigerate up to 2 days. Add the cheese and bake 5 to 10 minutes longer than usual, until 165°F (74°C) in the center.
  • Leftovers: refrigerate in an airtight container within 2 hours and eat within 3 to 4 days, as the FoodSafety.gov cold storage chart advises for cooked chicken dishes.
  • Reheat in the microwave in 30-second bursts, stirring between, or in a 350°F oven until hot, to 165°F (74°C), the safe temperature for reheated leftovers on the FoodSafety.gov temperature chart.
  • On a buffet: keep hot dip at 140°F (60°C) or above in a slow cooker on WARM. A dish left at room temperature should be cleared after 2 hours (1 hour above 90°F / 32°C).
  • Freezing: possible for up to 2 months, but the cream cheese can turn a little grainy. Thaw in the fridge and stir well while reheating.

Buffalo Chicken Dip FAQs

Can I make buffalo chicken dip with raw chicken?

Not in the dip itself. The dip bakes for only 20 to 25 minutes, which isn’t enough to cook raw chicken safely. Cook the chicken first, to 165°F (74°C), then shred it. Our sous vide chicken breast and air fryer chicken thighs are easy ways to cook a batch.

What is the best hot sauce for buffalo chicken dip?

A thin, vinegary cayenne pepper sauce is the classic choice and gives the true Buffalo wing flavor. Thick sauces, sriracha or very hot habanero sauces change the flavor and the heat a lot, so add them in small amounts.

Can I make buffalo chicken dip ahead of time?

Yes. Mix it up to 2 days ahead, refrigerate, and bake when your guests arrive, adding 5 to 10 minutes. You can also make it in the slow cooker in the morning and keep it on WARM.

How long can buffalo chicken dip sit out?

No more than 2 hours at room temperature, or 1 hour when it’s above 90°F (32°C) outdoors. To keep it out longer, serve it from a slow cooker on WARM.

Is buffalo chicken dip served hot or cold?

It’s best served hot, when the cream cheese is soft and the cheese is melted and stretchy. You can serve it cold as a spread for crackers or sandwiches, but it firms up a lot in the fridge. To serve leftovers cold, stir in a spoonful of ranch or sour cream to loosen it first, and keep it chilled until serving.

How many people does this serve?

About 10 people as one of several appetizers, at roughly â…“ cup each. For a big party, double it in a 9×13-inch dish and bake 30 to 35 minutes, or use a 6-quart slow cooker. For more ideas, browse our chicken recipes.
