This funnel cake recipe brings the taste of the state fair home: a simple sweet batter drizzled in loops into hot oil, fried until golden and crisp at the edges and tender in the middle, then buried under powdered sugar. It takes about 10 minutes to mix the batter, and each funnel cake fries in under 3 minutes. You don’t need special equipment. A funnel, a squeeze bottle or even a zip-top bag will do.

Below you’ll find the batter, step-by-step frying instructions, how to keep the oil at the right temperature, important safety tips for frying at home, and topping ideas. The printable recipe card is at the bottom of the page.

Why You’ll Love This Homemade Funnel Cake

  • Pantry ingredients: flour, sugar, baking powder, milk and eggs.
  • Quick: the batter needs no resting, and each cake fries in 2 to 3 minutes.
  • Crisp and light when the oil is at the right temperature.
  • Fun to make and endlessly customizable with toppings.

Funnel Cake Ingredients

  • All-purpose flour, 2 cups (250 g), spooned and leveled.
  • Granulated sugar, 2 tablespoons (25 g).
  • Baking powder, 1½ teaspoons.
  • Fine salt, ½ teaspoon.
  • Whole milk, 1⅓ cups (320 ml), plus 1 to 2 tablespoons more if needed.
  • Large eggs, 2.
  • Vanilla extract, 1 teaspoon.
  • Neutral oil for frying, about 6 cups (1.4 L): vegetable, canola or peanut oil.
  • Powdered sugar, for dusting.

Equipment You Need

  • A heavy, deep 10- to 12-inch (25 to 30 cm) skillet or a wide Dutch oven
  • A deep-fry or candy thermometer that clips to the pan
  • A funnel with a ½-inch (1.3 cm) opening, a squeeze bottle, or a zip-top bag with a corner snipped off
  • Tongs and a wide slotted spatula or spider
  • A wire rack set over a sheet pan, or a plate lined with paper towels
  • A fine sieve for the powdered sugar

How to Make Funnel Cake (Step by Step)

1. Heat the oil

Pour about 1½ inches (4 cm) of oil into the skillet or pot, leaving at least 2 inches of space below the rim. Clip on the thermometer and heat the oil over medium heat to 375°F (190°C). This takes 10 to 15 minutes.

2. Mix the batter

While the oil heats, whisk the flour, sugar, baking powder and salt in a large bowl. In another bowl, whisk the milk, eggs and vanilla. Pour the wet ingredients into the dry and whisk until smooth. The batter should be thicker than pancake batter but still pour in a steady ribbon. If it’s too thick to flow through your funnel, whisk in more milk, 1 tablespoon at a time.

3. Fill the funnel

Hold your finger over the bottom of the funnel and fill it with about ½ cup (120 ml) of batter. If you’re using a squeeze bottle or zip-top bag, fill it with the same amount for each cake.

4. Drizzle into the oil

Holding the funnel a few inches above the oil, release your finger and move the funnel in swirling, overlapping circles and zigzags to make a lacy round about 6 to 7 inches (15 to 18 cm) across. Work quickly and carefully, keeping your hand away from the oil.

5. Fry and flip

Fry for 60 to 90 seconds, until the bottom is golden brown. Carefully flip it with tongs and a spatula, and fry for 45 to 60 seconds more, until golden on the second side.

6. Drain and dust

Lift the funnel cake out, let the excess oil drip back into the pan, and set it on the rack or paper towels. Dust generously with powdered sugar through a sieve while it’s still warm. Let the oil come back to 375°F before frying the next one.

7. Serve right away

Funnel cakes are best within a few minutes of frying, while they’re still crisp. Serve them on their own or with your favorite toppings.

Frying Safety at Home

Hot oil deserves respect. Follow these simple rules every time:

  • Never leave hot oil unattended, and keep children and pets well away from the stove.
  • Use a thermometer. Oil that gets much hotter than 375°F can start to smoke, and very hot oil can catch fire.
  • Keep water away. Even a few drops of water in hot oil make it spatter violently. Dry your utensils and hands.
  • Don’t overfill the pan. Leave at least 2 inches between the oil and the rim so it can’t bubble over.
  • Be ready for a grease fire. Keep a lid that fits the pan nearby, and a kitchen fire extinguisher. Never use water on a grease fire. Turn off the heat and slide the lid over the pan.
  • Let the oil cool completely before moving or straining it.

Tips for the Best Funnel Cake

  • Keep the oil at 375°F (190°C). Too cool, and the funnel cake soaks up oil and turns greasy. Too hot, and the outside browns before the inside cooks.
  • Fry one at a time. Each cake drops the oil temperature, so wait for it to recover.
  • Get the batter thickness right. Thin batter spreads into a flat pancake; very thick batter won’t flow. Test with a small drizzle first.
  • Use a ring for perfect circles. Some cooks set a metal ring, such as a large biscuit cutter, in the oil and pour inside it. Lift it out with tongs after 20 seconds.
  • Dust while warm so the powdered sugar clings.

Common Funnel Cake Mistakes

  • Guessing the oil temperature. Without a thermometer, it’s easy to fry too cool (greasy, pale cakes) or too hot (dark outside, raw inside). A clip-on thermometer solves both.
  • Pouring too slowly. If you hesitate, the first part of the swirl overcooks before you finish. Move steadily and keep each cake to about ½ cup of batter.
  • Making the swirl too dense. Leave small gaps between the loops so hot oil can reach every strand. A solid disk cooks unevenly and stays doughy in the middle.
  • Flipping too early. Wait until the edges are golden and the cake holds together, or it can break apart in the oil.
  • Stacking them hot. Funnel cakes steam and go soft when stacked. Drain them in a single layer on a rack.

How to Serve Funnel Cakes to a Crowd

This funnel cake recipe makes about 7 cakes, and frying them one at a time means the first ones cool while you finish the rest. Heat the oven to 200°F (95°C), set a wire rack on a sheet pan inside, and keep finished funnel cakes warm in a single layer for up to 20 minutes. Dust them with powdered sugar just before serving, so the sugar doesn’t melt into the warm surface.

Funnel Cake Toppings

  • Classic powdered sugar
  • Sliced strawberries and whipped cream
  • Chocolate or caramel sauce
  • Cinnamon sugar (¼ cup sugar mixed with 1 teaspoon cinnamon)
  • Warm apple or cherry pie filling
  • A scoop of vanilla ice cream
  • Berry jam, as in the photo above

Easy Variations

  • Funnel cake fries: pipe the batter into the oil in straight 4- to 5-inch lines, fry 1 minute per side, and serve with chocolate or strawberry sauce for dipping.
  • Pancake mix shortcut: whisk 2 cups pancake mix with 1 cup milk, 1 egg and 2 tablespoons sugar, adjusting the milk until the batter pours in a thick ribbon. If you love a quick batter, see our easy pancake ideas.
  • Cinnamon vanilla: add ½ teaspoon ground cinnamon to the dry ingredients.
  • Mini funnel cakes: use ¼ cup of batter per cake for smaller, party-sized portions.

Storing Batter, Leftovers and Oil

  • Leftover batter contains milk and eggs, so cover it and refrigerate it right away. Use it within 1 day, and whisk it before frying.
  • Leftover funnel cakes are best eaten fresh. If you have extras, let them cool, store them loosely covered at room temperature for up to 1 day, and re-crisp them in a 350°F (175°C) oven for 3 to 5 minutes before dusting with sugar.
  • Frying oil: once it has cooled completely, strain it through a fine sieve into a clean container and store it in a cool, dark place. You can reuse it a few times for sweet fried foods. Throw it out if it smells off, looks dark, or foams.

Funnel Cake FAQs

What oil is best for funnel cakes?

Use a neutral oil with a high smoke point, such as vegetable, canola or peanut oil.

Why is my funnel cake greasy?

The oil was not hot enough. Use a thermometer and keep it at 375°F (190°C), letting it recover between cakes.

Why is my funnel cake flat and dense?

The batter was probably too thin, or the baking powder was old. Thicken the batter with a spoonful of flour and check the date on your baking powder.

Can I make funnel cake without a funnel?

Yes. A squeeze bottle, a zip-top bag with a ¼- to ½-inch corner cut off, or a measuring cup with a pour spout all work.

Can I make funnel cake in an air fryer?

No. The liquid batter needs hot oil to set into strands; in an air fryer it would simply drip through the basket.
