Spread the love

This chipotle chicken recipe is a homemade copycat of the smoky, charred chicken you get on burrito bowls at the fast-casual chain: boneless thighs soaked in a quick adobo marinade, cooked hot until the edges blacken, then chopped into bite-size pieces. It takes about 15 minutes of work, a blender, and one small can of chipotle peppers in adobo sauce.

Below you’ll find the ingredients and why each one matters, a heat-level chart so you can make it mild or hot, step-by-step marinating and cooking, times for the grill, a cast iron pan, the oven broiler and the air fryer, how to build bowls, burritos and tacos, meal prep and freezing, a fix-it table and an FAQ. The printable recipe card is at the bottom.

What Is Copycat Chipotle Chicken?

Copycat chipotle chicken is a home version of the grilled chicken served at Chipotle Mexican Grill. This recipe is inspired by that chicken; it isn’t the restaurant’s official recipe, and we aren’t affiliated with the chain. What’s widely known is that their chicken is boneless thigh meat in a chipotle-based adobo marinade, grilled and chopped. The rest here is a standard adobo-style marinade built to taste close.

What gives this style of chicken its flavor:

  • Chipotle peppers in adobo: chipotles are smoke-dried jalapeños, canned in a tangy, slightly sweet red sauce called adobo. They bring smoke, heat and color in one ingredient.
  • Thighs, not breasts: dark meat stays juicy over high heat and can take a hard char without drying out.
  • Cumin, oregano and garlic: the warm, earthy backbone of most adobo marinades.
  • A hot, fast cook: the chicken is seared until the edges are charred, rested briefly, then chopped so every piece has some crust.

Adobo chicken in this sense is Mexican-style. Filipino chicken adobo is a different dish, braised in soy sauce and vinegar, with no chipotle at all.

Chipotle Chicken Recipe Ingredients

These amounts make 6 servings, enough for 6 burrito bowls or about 12 tacos.

For the adobo marinade

  • Chipotle peppers in adobo sauce, 3 peppers plus 2 tablespoons of the sauce from a 7-ounce (198 g) can. This is a medium heat; see the chart below to adjust.
  • Neutral oil, 3 tablespoons (45 ml), such as avocado, canola or sunflower. Oil carries the smoky flavor into the meat and helps the chicken char instead of stick.
  • Garlic, 4 cloves, peeled.
  • Fresh lime juice, 1 tablespoon (15 ml), and red wine vinegar or apple cider vinegar, 1 tablespoon (15 ml). Just enough acid to brighten the marinade without turning the meat mushy.
  • Ground cumin, 1½ teaspoons.
  • Dried oregano, 1 teaspoon, Mexican oregano if you can find it.
  • Diamond Crystal kosher salt, 1½ teaspoons (or ¾ teaspoon table salt), and black pepper, ½ teaspoon.

For the chicken

  • Boneless skinless chicken thighs, 2 lb (900 g), about 8 thighs. Trim any large flaps of fat.
  • Oil, 1 tablespoon, for the grill grates or pan.
  • To finish: ¼ cup chopped fresh cilantro and lime wedges.

Leftover chipotles freeze well. Spoon them with some sauce into an ice cube tray, freeze, then keep the cubes in a bag for up to 3 months.

Chipotle Heat Level Chart

In any chipotle chicken recipe, the number of peppers controls the heat more than anything else. The adobo sauce adds smoke and tang with only a little heat, so you can keep that amount the same and change only the peppers.

HeatChipotle peppersAdobo sauceHow it tastes
Mild1 pepper, seeds scraped out2 tablespoonsSmoky and savory, a gentle warmth; fine for most kids
Medium (the recipe card)3 peppers2 tablespoonsNoticeable heat that builds, close to the restaurant style
Hot5 peppers3 tablespoonsReal burn; tame it with sour cream or guacamole
Extra hot6 to 7 peppers plus a pinch of cayenne3 tablespoonsFor heat lovers only

Cans differ in heat. If you’re unsure, blend the marinade with fewer peppers, taste a tiny bit, and add more. You can’t take heat back out once the chipotle chicken has soaked in it.

  • Wear gloves or wash your hands well after handling chipotles, and keep your fingers away from your eyes.
  • Most of the burn is in the seeds and the ribs; scraping them out lowers the heat without losing the smoke.

How to Make the Chipotle Chicken Recipe (Step by Step)

This chipotle chicken recipe is just blend, marinate, cook hot, rest and chop. Plan on 15 minutes of hands-on work, at least an hour in the fridge, and about 12 minutes of cooking.

  1. Blend the marinade. Add the chipotles, adobo sauce, oil, garlic, lime juice, vinegar, cumin, oregano, salt and pepper to a blender or a tall cup for an immersion blender. Blend 20 to 30 seconds until smooth and brick red.
  2. Trim the chicken. Trim large pieces of fat. If any thighs are much thicker than the rest, butterfly the thick part so all the pieces cook in the same time.
  3. Marinate. Put the chicken in a gallon zip-top bag or a glass dish, pour in the marinade and turn to coat every piece. Press out the air, seal and refrigerate 1 to 24 hours (4 to 8 is ideal).
  4. Heat your grill or pan. Bring a grill to medium-high, about 400°F to 450°F (205°C to 230°C), and oil the grates. For indoor methods, see the chart in the next section.
  5. Cook. Lift the chicken out, letting the excess marinade drip off, and discard the used marinade. Cook 4 to 6 minutes per side without moving it, until charred at the edges and 165°F (74°C) in the thickest part.
  6. Rest. Move to a cutting board and rest 5 minutes so the juices settle.
  7. Chop. Cut into ½- to ¾-inch (1.5 to 2 cm) pieces, toss with any juices on the board, the cilantro and a squeeze of lime. Taste and add a pinch of salt if needed.

Use an instant-read thermometer rather than color to check doneness. The FoodSafety.gov safe minimum temperature chart lists 165°F for all poultry. Thighs are still tender at 175°F to 180°F (79°C to 82°C), so there’s no rush to pull them the second they hit 165°F.

How Long to Marinate Adobo Chicken

This adobo chicken marinade has only 2 tablespoons of acid for 2 pounds of meat, so it’s gentle. That means you can marinate a long time without the texture turning soft or chalky.

Time in the fridgeResult
Under 1 hourFlavor stays on the surface; still good in a pinch
1 to 3 hoursWell seasoned outside, mild inside
4 to 8 hoursThe sweet spot: smoky all the way through
12 to 24 hoursDeepest flavor; edges a little softer, still juicy
Over 24 hoursNot recommended; the texture starts to turn mealy
  • Always marinate in the refrigerator, never on the counter.
  • Take the chipotle chicken out of the fridge 15 to 20 minutes before cooking so it cooks more evenly.
  • Want a sauce? Set aside 3 tablespoons of marinade before it touches raw chicken. Never reuse marinade that held raw meat unless you boil it for at least 1 minute.

If you only have 30 minutes, cut the thighs in half first. More surface means more flavor in less time.

Four Ways to Cook It: Grill, Cast Iron, Broiler and Air Fryer

The grill gets you closest to the restaurant char, but every method below gives you good copycat chipotle chicken. Times are for 2 lb of boneless thighs about ¾ inch (2 cm) thick. All of them finish at 165°F (74°C) or above in the thickest part.

MethodHeatTimeTips
Grill (gas or charcoal)Medium-high, 400°F to 450°F (205°C to 230°C)4 to 6 minutes per side, 10 to 12 totalOil the grates well; don’t move the chipotle chicken for the first 3 minutes so it releases cleanly
Cast iron skillet or grill panMedium-high with 1 tablespoon oil5 to 6 minutes on the first side, 4 to 5 on the secondCook in 2 batches; crowding makes it steam instead of brown
Oven broilerHigh, rack 4 to 6 inches (10 to 15 cm) below the element6 to 7 minutes per side, 12 to 15 totalUse a foil-lined sheet pan with a wire rack; watch closely after the flip
Air fryer400°F (200°C)12 to 14 minutes, flipping halfwayOne layer with space between pieces; cook in 2 batches in a 5-quart basket

Grill notes

Charcoal gives a little more smoke, but gas works fine because the chipotles bring their own smoke. Leave one part of the grill cooler. If a piece flares up or chars before it’s cooked, move it there to finish.

Indoor notes

Cast iron gives the best crust indoors. Shake off as much marinade as you can, since the sugars in adobo sauce burn quickly on a hot pan. If the pan smokes heavily, lower the heat to medium. For more stovetop ideas with the same cut, see these boneless skinless chicken thigh recipes on the stove top.

The air fryer is the most hands-off. It won’t char quite like a grill, so run the chopped chicken under the broiler for 1 to 2 minutes if you want darker edges. Our air fryer chicken thighs guide covers basket sizes and timing in more detail, and these oven-roasted chicken thighs are a good option when you need a big batch from the oven.

Build a Burrito Bowl, Burrito or Tacos

Chopped chipotle chicken is made for build-your-own dinners. Set everything out and let each person fill their own bowl.

Quick cilantro-lime rice

  1. Rinse 1½ cups (280 g) long-grain white rice until the water runs mostly clear.
  2. Simmer with 2¼ cups (530 ml) water, 1 tablespoon oil, 1 bay leaf and 1 teaspoon kosher salt, covered, on low for 15 minutes. Rest 10 minutes off the heat.
  3. Fluff with a fork and fold in ½ cup chopped cilantro, the zest of 1 lime and 2 tablespoons lime juice.

For the fajita veggies, slice the peppers and onion into strips and sear them in the same hot skillet you used for the chicken with a little oil and salt. The same peppers and onions go with beef too; this beef fajita recipe is a good second taco night.

Burritos and tacos

  • Burritos: warm 12-inch flour tortillas for 20 seconds so they fold without cracking. Fill with about ¾ cup rice, â…“ cup beans, ½ cup chicken, salsa and cheese, fold the sides in and roll tightly. Toast seam-side down in a dry pan for 1 minute.
  • Tacos: char small corn tortillas over a gas flame or in a dry skillet. Add chicken, diced white onion, cilantro and a squeeze of lime. Plan on 2 to 3 tacos per person.
  • Quesadillas: layer chicken and cheese in a flour tortilla and cook in a buttered skillet, 2 to 3 minutes per side.
  • Salad: toss romaine, corn, black beans, tomatoes and chicken with a chipotle-lime dressing made from the reserved marinade, extra lime juice and a little honey.

Meal Prep, Storage and Freezing

This adobo chicken is one of the easiest proteins to meal prep. It reheats well, and it’s just as good cold on a salad.

Meal prep plan

WhenWhat to do
SundayBlend the marinade, marinate the chipotle chicken, cook the rice and beans
Same eveningCook and chop the chipotle chicken; pack 5 to 6 bowls with salsa in small separate cups
Through ThursdayAdd guacamole, sour cream and fresh lime just before eating

Storing cooked chicken

  • Refrigerate within 2 hours of cooking, in shallow airtight containers, for 3 to 4 days.
  • Freeze cooked, chopped chicken flat in freezer bags for up to 3 months. Thaw overnight in the fridge.
  • Reheat in a skillet over medium heat with a splash of water, or in the microwave, covered, until it reaches 165°F (74°C).

Freezing adobo chicken raw in the marinade

This is the best make-ahead trick. Put the raw thighs and marinade in a freezer bag, press out the air, label it and freeze flat for up to 3 months. The adobo chicken marinates as it thaws in the fridge, which takes about 24 hours. Cook it the same day it’s thawed.

These times follow the FoodSafety.gov cold food storage chart.

Troubleshooting Copycat Chipotle Chicken

Most chipotle chicken problems come from heat that’s too low, a crowded pan, or the wrong cut. Here’s how to fix them.

ProblemLikely causeFix
No char, chicken looks palePan or grill not hot enough, or too crowdedPreheat 10 minutes; cook in batches; finish chopped chicken under the broiler 1 to 2 minutes
Outside burnt, inside rawHeat too high or thighs too thickButterfly thick pieces; move to a cooler part of the grill or lower to medium
Dry chickenBreasts used, or cooked far past 180°FUse thighs; use a thermometer and rest before chopping
Too spicyToo many peppers, or a hot canServe with sour cream, guacamole and rice; use 1 to 2 peppers next time
Not smoky enoughToo little adobo, or a short marinadeAdd 1 more tablespoon adobo sauce and marinate at least 4 hours
BlandUnder-saltedToss the chopped chicken with a pinch of salt and fresh lime juice
Chicken sticks to the grillDirty or dry grates, or flipped too soonScrape and oil the grates; wait until it releases on its own

If the pan is smoking hard indoors, the adobo sauce is burning. Wipe the pan between batches and pat the adobo chicken a little drier before it goes in.

Chipotle Chicken FAQ

What is the chicken at Chipotle marinated in?

It’s widely reported to be a chipotle adobo marinade on boneless thigh meat. The exact recipe isn’t public. This copycat chipotle chicken uses chipotles in adobo, garlic, cumin, oregano, oil, lime, vinegar and salt to get a similar smoky, savory flavor.

Can I use chicken breast instead of thighs?

Yes. Pound the breasts to an even ¾ inch, marinate 1 to 8 hours, and cook to exactly 165°F, about 4 to 5 minutes per side on the grill. Breasts are leaner, so rest them 5 minutes and chop them right before serving.

Is chipotle chicken spicy?

With 3 peppers it’s medium: warm and smoky, with heat that builds. For a mild chipotle chicken, use 1 pepper with the seeds scraped out and keep the 2 tablespoons of sauce.

How long should chipotle chicken marinate?

At least 1 hour and up to 24 hours in the fridge. Four to 8 hours gives the best balance of deep flavor and juicy texture.

Can I make it in the oven without a broiler?

Yes. Roast the marinated thighs on a lined sheet pan at 425°F (220°C) for 18 to 22 minutes, until 165°F inside. The edges won’t char as much, so sear the chopped chicken in a hot skillet for 1 to 2 minutes if you like.

How many calories are in a serving?

About 275 calories per serving of chicken, one sixth of the recipe, before rice, beans or toppings. A full burrito bowl usually lands around 600 to 750 calories depending on the toppings.

Method

  1. Blend the chipotle peppers, adobo sauce, oil, garlic, lime juice, vinegar, cumin, oregano, salt and pepper for 20 to 30 seconds until smooth.
  2. Trim large pieces of fat from the chicken and butterfly any very thick thighs so all the pieces are about 3/4 inch (2 cm) thick.
  3. Put the chicken in a zip-top bag, add the marinade and turn to coat. Seal and refrigerate 1 to 24 hours, ideally 4 to 8 hours. Take it out 15 to 20 minutes before cooking.
  4. Heat a grill to medium-high, 400°F to 450°F (205°C to 230°C), and oil the grates. Lift the chicken from the marinade, let the excess drip off and discard the used marinade.
  5. Grill 4 to 6 minutes per side without moving it, until charred at the edges and 165°F (74°C) in the thickest part. Cast iron: medium-high with 1 tbsp oil, in 2 batches, 5 to 6 minutes then 4 to 5 minutes. Broiler: 4 to 6 inches below high heat, 6 to 7 minutes per side. Air fryer: 400°F (200°C) for 12 to 14 minutes, flipping halfway.

  7. Serve in burrito bowls with cilantro-lime rice, beans, fajita vegetables and salsa, or in burritos and tacos.

Notes

Heat: 1 pepper with the seeds scraped out is mild, 3 is medium and 5 is hot; keep the 2 tbsp adobo sauce the same. Never reuse marinade that held raw chicken unless boiled for at least 1 minute. Refrigerate leftovers within 2 hours for 3 to 4 days, or freeze cooked chicken up to 3 months. To make ahead, freeze the raw chicken in the marinade up to 3 months and thaw in the fridge about 24 hours. This is a homemade copycat inspired by the restaurant’s chicken, not the official recipe.
