  • 4 salmon fillets about 6 oz / 170 g each, 1 inch thick
  • 3 tbsp white miso paste
  • 1 1/2 tbsp maple syrup or honey
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp mirin or 1 tbsp water + 1 tsp sugar
  • 1 tsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp fresh ginger finely grated
  • 1 small garlic clove grated
  • green onions, sesame seeds and lime wedges to serve

Equipment

  • Rimmed baking sheet with foil
  • Instant-read thermometer

Method

  1. Whisk the miso, maple syrup, soy sauce, mirin, rice vinegar, sesame oil, ginger and garlic.
  2. Pat the salmon dry, place skin side down on a foil-lined, oiled baking sheet and spread the glaze over the tops and sides. Rest 15 to 30 minutes in the fridge if you have time.
  3. Bake at 400°F (200°C) for 8 to 11 minutes, until almost cooked through.
  4. Broil on high about 6 inches from the heat for 1 to 3 minutes, watching closely, until caramelized.
  5. Check that the thickest part reaches 145°F (63°C) and flakes easily. Garnish and serve.
