  • 2 ribs celery diced
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1 cup brown or green lentils 190 g, rinsed and sorted
  • 1 can diced tomatoes 14.5 oz / 411 g

  • 1 tbsp lemon juice plus salt and pepper to taste

  2. Add the garlic, cumin, smoked paprika and thyme and cook 1 minute, until fragrant.
  3. Add the lentils, tomatoes, broth and bay leaf. Bring to a boil, then reduce to a simmer.
  4. Simmer partly covered for 25 to 30 minutes, until the lentils are tender.
  5. Remove the bay leaf. Stir in the spinach until wilted, 1 to 2 minutes, then add the lemon juice, salt and pepper.
