Method
- Heat the oven to 400°F (205°C) with a rack in the middle. Line a rimmed sheet pan with parchment.
- Cook the bacon in a skillet over medium heat for 8 to 10 minutes until crisp. Drain on paper towels and crumble.
- In a bowl, mix the chicken, bacon, green onions, ¼ cup Parmesan and Caesar dressing. Fold in the mozzarella. The filling should clump when squeezed and not look wet.
- Divide the dough into 4 pieces of about 6 oz (170 g). On a lightly floured surface, roll each into a 9 × 7-inch (23 × 18 cm) rectangle about ⅛ inch thick. Rest the dough 5 minutes if it springs back.
- Spoon a quarter of the filling in a log along one long side, leaving a 1-inch border at that edge and at both ends. Fold the short ends over the filling and roll it up snugly.
- Brush the far edge with water, finish rolling and pinch the seam and ends firmly. Set the bakes seam side down on the pan, 2 to 3 inches apart, and cut 2 or 3 small slits in each top.
- Stir the garlic into the melted butter. Brush it over the bakes and sprinkle with the remaining ¼ cup Parmesan and the parsley.
- Bake for 20 to 25 minutes, until the tops and bottoms are deep golden and the filling reaches 165°F (74°C). Rest 5 minutes before slicing.
Notes
This is a homemade copycat inspired by the Costco food-court chicken bake, not the official recipe; Simple Easy Recipe isn't affiliated with Costco. Use fully cooked chicken; poultry is safe at 165°F (74°C). To freeze raw, freeze the shaped bakes without the topping, then add it and bake from frozen at 400°F for 35 to 40 minutes. Refrigerate leftovers within 2 hours and eat within 3 to 4 days; reheat to 165°F (74°C) in an air fryer at 350°F for 8 to 10 minutes. Calories are an estimate per bake from USDA FoodData Central values.
