Spread the love

A buffalo chicken wrap is the easiest way to get the flavor of hot wings into a lunch you can hold in one hand: juicy chicken tenders tossed in a buttery, tangy buffalo sauce, rolled up in a big flour tortilla with crisp romaine, tomato, celery and a cool drizzle of ranch or blue cheese dressing. The whole batch of four takes about 35 minutes, and the wraps get a quick toast in the skillet so they hold together.

Below you’ll find the step-by-step method, a homemade buffalo sauce ratio you can adjust, crispy (breaded) and grilled versions with times, a rotisserie chicken shortcut, how to roll a wrap so it doesn’t fall apart, a heat-level table, lighter swaps, meal prep tips that keep the tortillas from going soggy, and a printable recipe card for 4 wraps.

Buffalo Chicken Wrap at a Glance

Here’s the whole process in six short steps.

  1. Season the chicken: toss 1¼ pounds (565 g) of chicken tenders with garlic powder, smoked paprika, salt and pepper.
  2. Sear: cook the tenders in a hot skillet with a little oil for 6 to 8 minutes, turning once, until they reach 165°F (74°C).
  3. Make the sauce: melt 3 tablespoons of butter with 6 tablespoons of hot sauce, a 2-to-1 ratio.
  4. Toss: slice the chicken and coat it in the warm buffalo sauce.
  5. Fill and roll: layer romaine, chicken, tomato, celery and ranch on warm tortillas, fold in the sides and roll tightly.
  6. Toast: set the wraps seam-side down in a dry skillet for 1 to 2 minutes per side, then cut in half.

Ingredients You Need

The list is short, and most of it is probably in your fridge already. Here’s what each part brings to the wrap.

IngredientAmount (4 wraps)Why it’s there
Chicken tenderloins1¼ lb (565 g)Tender, quick-cooking and already strip-shaped. Breasts cut into strips work too.
Olive oil1 tbsp (15 ml)For searing; any neutral oil is fine.
Garlic powder, smoked paprika, salt, pepper½ tsp, ½ tsp, ½ tsp, ¼ tspSeasons the chicken itself, so it isn’t bland under the sauce.
Cayenne pepper hot sauce6 tbsp (90 ml)The heart of buffalo sauce: vinegary, salty and moderately hot.
Unsalted butter3 tbsp (42 g)Softens the heat and makes the sauce cling to the chicken.
Large flour tortillas4 (10-inch, about 70 g each)Big enough to fold the ends in. Smaller ones tear and leak.
Romaine lettuce2 cups shredded (95 g)Crunch and a moisture barrier between sauce and tortilla.
Tomato1 medium (120 g), dicedFreshness and color. Pat it dry so it doesn’t water down the wrap.
Celery1 rib (40 g), thinly slicedThe classic wing partner, adding cool crunch.
Ranch or blue cheese dressing¼ cup (60 ml)Creamy contrast to the heat.

Want a little more richness? Scatter 2 tablespoons of crumbled blue cheese or shredded cheddar over each wrap before rolling. Spinach or iceberg can stand in for romaine.

Homemade Buffalo Sauce: The Ratio

Classic buffalo sauce is just two ingredients: a cayenne pepper hot sauce and butter. Bottled buffalo sauce works in a pinch, but homemade takes 2 minutes and you control the heat. The ratio to remember is 2 parts hot sauce to 1 part butter by volume.

  • For this recipe: 6 tablespoons (90 ml) hot sauce plus 3 tablespoons (42 g) butter, which makes a little over ½ cup.
  • Method: melt the butter in a small saucepan or in the same skillet over low heat, whisk in the hot sauce and take it off the heat as soon as it’s smooth. Don’t boil it, or the butter can separate.
  • Optional extras: ¼ teaspoon garlic powder, 1 teaspoon Worcestershire sauce, or 1 teaspoon honey to round off the vinegar.

Use a thin, vinegar-based cayenne sauce, not a thick sriracha-style chili sauce. That vinegar tang is what makes buffalo sauce taste like wings.

How to Make a Buffalo Chicken Wrap, Step by Step

This is the pan-seared version from the recipe card. It’s the quickest route and needs only one skillet.

1. Prep the fillings first

Shred the romaine, dice the tomato and slice the celery before you touch the chicken. Once the chicken is sauced, you want to roll right away while everything is warm. Pat the tomato dry with a paper towel; extra juice is one of the main reasons wraps get soggy.

2. Season and sear the chicken

  1. Pat 1¼ pounds (565 g) of chicken tenders dry and toss them with the garlic powder, smoked paprika, salt and pepper.
  2. Heat 1 tablespoon of olive oil in a 12-inch skillet over medium-high heat until it shimmers.
  3. Lay the tenders in a single layer and cook 3 to 4 minutes per side, until golden and they reach 165°F (74°C) in the thickest part.
  4. Move them to a cutting board and rest 3 minutes, then slice into bite-size pieces.

3. Make the sauce and toss

Turn the heat to low, wipe out any burnt bits and melt the butter in the skillet. Whisk in the hot sauce, then add the sliced chicken and toss until every piece is glossy. Use tongs to lift the chicken out so the extra sauce stays behind in the pan.

4. Warm the tortillas

Wrap the stack in a damp paper towel and microwave for 20 to 30 seconds, or warm each one in a dry skillet for 10 seconds per side. They should feel soft and bendy.

5. Fill, roll and toast

  1. Lay a tortilla flat. Spread 1 tablespoon of ranch across the lower third.
  2. Add ½ cup of romaine, then a quarter of the buffalo chicken, tomato and celery on top.
  3. Fold in the sides and roll it up tightly (see the rolling section below).
  4. Wipe the skillet and set it over medium heat. Place the wraps seam-side down and toast 1 to 2 minutes per side until golden and sealed.
  5. Cut each wrap in half on the diagonal and serve right away.

Crispy vs. Grilled Buffalo Chicken

The pan-seared tenders in the recipe card are the middle ground. If you want crunch, bread them. If you want something lighter with smoky char, grill them. Here’s how the main options compare for the same 1¼ pounds (565 g) of chicken.

MethodTemperatureCook timeTexture
Pan-seared tenders (card)Medium-high heat6 to 8 minutes totalJuicy, lightly browned
Air fryer, breaded400°F (200°C)10 to 12 minutes, flip halfwayVery crispy, little oil
Oven, breaded425°F (220°C)15 to 18 minutes, flip onceCrispy, hands-off for a crowd
Pan-fried, breadedOil at 350°F (175°C)3 to 4 minutes per sideCrunchiest, most like a restaurant wrap
Grilled tendersMedium-high, 400 to 450°F (200 to 230°C)3 to 4 minutes per sideSmoky, charred edges
Grilled breasts, pounded ½ inchMedium-high, 400 to 450°F (200 to 230°C)5 to 6 minutes per sideFirmer, easy to slice thin

Crispy buffalo chicken wrap

For a crispy buffalo chicken wrap, set up three shallow dishes: ½ cup (63 g) flour seasoned with the spices from the card, 2 beaten eggs, and 1½ cups (90 g) panko. Dredge each tender in flour, dip in egg and press into the panko. Cook by any breaded method in the table, then toss in the sauce just before rolling so the coating stays crunchy.

The air fryer is the easiest choice. Spray the breaded tenders lightly with oil and don’t crowd the basket. Our air fryer chicken cutlets use the same breading and timing if you’d like a full walkthrough. For a sticky, extra-crunchy twist, the double-fry method in our Korean fried chicken recipe also works with buffalo sauce.

Grilled buffalo chicken wrap

A grilled buffalo chicken wrap is lighter and has a nice smoky edge. Brush the seasoned chicken with oil and grill it over medium-high heat, then slice and toss it in the sauce. You can also brush a spoonful of sauce on during the last minute for a glaze, but keep most of it for tossing, since the butter can flare up on the grates.

  • Pound breasts to an even ½ inch so they cook through before the outside dries.
  • Rest grilled chicken 5 minutes before slicing to keep the juices in.
  • Smoky chipotle fans can swap the marinade for the one in our chipotle chicken recipe, then finish with buffalo sauce.

Rotisserie and Leftover Chicken Shortcut

No time to cook chicken? A store-bought rotisserie chicken turns this into a 10-minute lunch. One average bird gives you about 3 cups of meat, which is enough for 4 wraps with a little left over.

  1. Pull the meat off the bones and shred or chop about 3 cups (420 g). Skip the skin, which turns flabby in sauce.
  2. Make the buffalo sauce in a skillet over low heat.
  3. Add the chicken and stir for 2 to 3 minutes until it’s hot all the way through, 165°F (74°C) for reheated leftovers.
  4. Fill, roll and toast the wraps as usual.

Leftover fried chicken works too. Re-crisp it first with our guide to reheating fried chicken in the air fryer, pull it off the bone, then toss it in the sauce. Leftover grilled or baked breasts from any of our boneless skinless chicken breast recipes are perfect sliced thin and warmed in the sauce.

How to Roll a Wrap So It Doesn’t Fall Apart

A tight roll is what separates a neat wrap from a pile of lettuce on your plate. It comes down to the tortilla size, how much filling you use and where you put it.

  • Use 10-inch or larger tortillas. Burrito-size (10 to 12 inches) gives you enough edge to fold in the sides.
  • Warm them. A warm tortilla stretches; a cold one cracks along the fold.
  • Don’t overfill. About 1 heaping cup of filling per wrap is the limit for a 10-inch tortilla.
  • Fill the lower third. Put everything in a compact log about 2 inches up from the bottom edge, leaving 2 inches clear on each side.
  • Lettuce goes down first. It shields the tortilla from sauce and adds structure.

The fold-and-tuck method

  1. Fold the left and right sides over the filling, about 2 inches each.
  2. Lift the bottom edge up and over the filling, then use your fingers to tuck it snugly under the filling, pulling back gently to tighten.
  3. Keep rolling away from you, holding the sides in, until you reach the top edge.
  4. Place it seam-side down right away. Toasting seam-side down in a skillet seals the edge so it doesn’t unroll.

If you’re packing wraps for later, roll them snugly in foil or parchment and cut through the paper. The wrapper holds everything together while you eat.

Heat Levels: From Mild to Extra Hot

Buffalo sauce heat is easy to adjust with the butter ratio and a pinch of cayenne. Use this table to match the wraps to your crowd. Amounts are for 4 wraps.

Heat levelHot sauceButterExtraTastes like
Mild4 tbsp (60 ml)4 tbsp (56 g)1 tsp honeyButtery and tangy, gentle warmth; kid-friendly
Medium (card)6 tbsp (90 ml)3 tbsp (42 g)NoneClassic wing-shop buffalo
Hot6 tbsp (90 ml)2 tbsp (28 g)¼ tsp cayenneSharp, lingering burn
Extra hot6 tbsp (90 ml)2 tbsp (28 g)½ tsp cayenne plus a few dashes of habanero sauceFor serious heat seekers

Ranch, blue cheese and a little extra celery all cool the heat in the wrap.

Lighter Swaps

A buffalo chicken wrap is already a fairly balanced meal, with lean protein and vegetables. These swaps trim calories without losing the flavor that makes it worth eating.

  • Greek yogurt ranch: stir together ½ cup (120 g) plain Greek yogurt, 1 tablespoon milk, ½ teaspoon dried dill, ¼ teaspoon each garlic powder and onion powder, and a pinch of salt and pepper. It’s thick, tangy and much lighter than bottled ranch.
  • Less butter: cut the butter to 1½ tablespoons and add 1 tablespoon of water or chicken broth to the sauce. It’s thinner but still coats.
  • Lettuce wraps: skip the tortillas and spoon the chicken into large butter lettuce or romaine leaves. Plan on 2 to 3 leaves per serving.
  • Whole wheat or low-carb tortillas: both work; warm them well, since they’re less stretchy.

A whole wheat tortilla with Greek yogurt ranch and grilled chicken makes a lighter buffalo chicken wrap that still feels like a treat.

Meal Prep and Storage

Buffalo chicken wraps are great for packed lunches, but sauce and tortillas don’t mix well overnight. The fix is to store the parts separately and assemble right before eating.

ComponentHow to storeFridge time
Cooked chicken (unsauced)Airtight container3 to 4 days
Buffalo sauceSmall jar or lidded cupUp to 1 week
Chopped romaine, celeryContainer lined with a paper towel3 to 4 days
TomatoDice the morning of, or pack cherry tomatoes whole1 day once diced
DressingSeparate small containerPer the bottle, or 5 days for homemade yogurt ranch
  • For lunch: warm the chicken and sauce together, then roll the wrap with cold lettuce. Or pack a fully assembled wrap with the sauced chicken in the middle and the lettuce wrapped around it, and eat it within 4 to 5 hours.
  • Keep it cold: pack wraps with an ice pack, and refrigerate leftovers within 2 hours, following the FoodSafety.gov cold food storage chart.
  • Freezing: freeze the cooked, unsauced chicken for up to 3 months. Don’t freeze assembled wraps; the lettuce and tomato turn mushy.

What to Serve with Buffalo Chicken

One wrap is filling on its own, but a side makes it feel like a full plate, especially for dinner.

  • Wing-night classics: carrot and celery sticks with extra ranch or blue cheese dip.
  • Crunchy sides: tortilla chips, kettle chips, sweet potato fries or air-fried potato wedges.
  • Something fresh: a simple coleslaw, cucumber salad or a cup of tomato soup.
  • Game day spread: serve halved wraps alongside a skillet of buffalo chicken dip, a creamy baked mix of chicken, cream cheese and buffalo sauce, for the same flavor two ways.

Chicken Safety

Chicken tenders cook fast, but thin pieces can still hide an undercooked center. A quick check with a thermometer takes the guesswork out.

  • Cook to 165°F (74°C). Poultry is safe at 165°F, per the FoodSafety.gov safe minimum internal temperatures chart. Check the thickest tender with an instant-read thermometer.
  • Reheat leftovers to 165°F (74°C) too, including rotisserie chicken that’s been in the fridge.
  • Keep raw and cooked apart. Use a clean plate and tongs for cooked chicken, and wash the board after cutting raw tenders.

Buffalo Chicken Wrap FAQ

What goes in a buffalo chicken wrap?

The classic filling is chicken tossed in buffalo sauce, crisp lettuce, tomato, celery and ranch or blue cheese dressing, rolled in a large flour tortilla. Shredded cheddar, crumbled blue cheese, red onion and shredded carrots are popular extras.

How do you keep buffalo chicken wraps from getting soggy?

Let the sauced chicken drip off excess sauce, pat tomatoes dry, lay lettuce down first as a barrier, and toast the wrap seam-side down. For meal prep, keep the sauce separate and assemble the wraps right before eating.

Is buffalo sauce the same as hot sauce?

Not quite. Buffalo sauce is a cayenne pepper hot sauce mixed with melted butter, usually about 2 parts hot sauce to 1 part butter. The butter makes it richer, milder and better at clinging to chicken.

Can I make buffalo chicken wraps ahead of time?

Yes. Cook the chicken and sauce up to 4 days ahead and store them separately in the fridge. Warm the chicken in the sauce, then roll and toast the wraps in about 5 minutes.

Are buffalo chicken wraps healthy?

They can be. Each wrap has plenty of protein and some vegetables. Use Greek yogurt ranch, less butter, a whole wheat tortilla or lettuce leaves, and grilled rather than breaded chicken for a lighter version.
