Quinoa cooks in 15 minutes, keeps well in the fridge, and soaks up whatever flavors you give it, which makes it perfect for weeknights. These easy quinoa recipes turn it into real dinners: a one-pan black bean and corn skillet, a lemony Mediterranean salad, stuffed peppers, fried “rice,” veggie patties and more. Each one includes amounts and steps, so you can cook straight from this page, and the full recipe card for the one-pan skillet is at the bottom.

First, here’s how to cook quinoa so it’s fluffy, not mushy, every time.

How to Cook Fluffy Quinoa

  1. Rinse it. Put 1 cup (170 g) quinoa in a fine-mesh strainer and rinse under cold water for 30 seconds, rubbing it with your fingers. This removes saponins, a natural coating that can taste bitter or soapy. Many brands are pre-rinsed, but a quick rinse doesn’t hurt.
  2. Use 1¾ cups (420 ml) of water or broth for every cup of quinoa, plus a pinch of salt.
  3. Simmer covered for 15 minutes. Bring to a boil, cover, lower the heat to low and cook until the water is absorbed.
  4. Rest for 5 to 10 minutes off the heat with the lid on, then fluff with a fork.

One cup of dry quinoa makes about 3 cups cooked. For extra flavor, toast the rinsed, drained quinoa in 1 teaspoon of oil for 2 minutes before adding the liquid.

A cup of cooked quinoa has about 220 calories and 8 grams of protein, according to USDA FoodData Central, so it makes a filling base for meatless meals.

7 Easy Quinoa Recipes

1. One-Pan Black Bean and Corn Quinoa Skillet

The quickest quinoa dinner we know: everything cooks together in one pan. Soften 1 diced onion in 1 tablespoon olive oil, add 2 cloves garlic, 1 teaspoon cumin, 1 teaspoon chili powder and ½ teaspoon smoked paprika. Stir in 1 cup (170 g) rinsed quinoa, a 14.5 oz (411 g) can of fire-roasted diced tomatoes with their juice, 1 cup (240 ml) vegetable broth, a drained 15 oz (425 g) can of black beans and 1 cup frozen corn. Cover and simmer for 18 to 20 minutes, until the quinoa is tender. Top with 1 cup shredded Monterey Jack, cover for 2 minutes to melt, and finish with avocado, cilantro and lime. Serves 4. The full recipe card is at the bottom of the page.

2. Mediterranean Lemon Quinoa Salad

Toss 3 cups cooled cooked quinoa with 1 diced cucumber, 1 cup halved cherry tomatoes, a drained 15 oz can of chickpeas, ¼ cup finely chopped red onion, ½ cup (75 g) crumbled feta, ¼ cup Kalamata olives and a big handful of chopped parsley. Whisk 3 tablespoons olive oil, 3 tablespoons lemon juice, 1 small grated garlic clove, ½ teaspoon dried oregano, salt and pepper, and toss. It keeps for 3 to 4 days, so it’s perfect for lunches.

3. Quinoa Stuffed Peppers

Heat the oven to 375°F (190°C). Cut the tops off 4 large bell peppers and remove the seeds. Mix 2 cups cooked quinoa, a drained 15 oz can of black or pinto beans, 1 cup salsa, ½ cup corn, 1 teaspoon cumin and ¾ cup shredded cheese. Stuff the peppers, stand them in a baking dish with ¼ cup water in the bottom, and cover with foil. Bake for 30 minutes, uncover, top with another ¼ cup cheese and bake 10 to 15 minutes more, until the peppers are tender.

4. Quinoa Fried “Rice”

Cold, day-old quinoa works just like leftover rice. Heat 1 tablespoon oil in a large skillet, scramble 2 eggs and set them aside. Add another tablespoon of oil and stir-fry 1 cup frozen peas and carrots with 2 sliced green onions for 2 minutes. Add 3 cups cold cooked quinoa and stir-fry over high heat for 3 to 4 minutes, until hot and a little crisp. Add 2 tablespoons soy sauce, 1 teaspoon toasted sesame oil and the eggs. For the classic rice version, see our 5-ingredient fried rice.

5. Greek Chickpea Quinoa Bowls

Divide 3 cups warm quinoa among 4 bowls. Top with roasted chickpeas (toss a drained can of chickpeas with 1 tablespoon oil, ½ teaspoon each smoked paprika and garlic powder, and roast at 425°F for 20 to 25 minutes), sliced cucumber, tomatoes, red onion and feta. Finish each bowl with a spoonful of tzatziki or plain Greek yogurt mixed with lemon, dill and garlic.

6. Crispy Quinoa Veggie Patties

Mix 2 cups cooked, cooled quinoa with 2 eggs, ½ cup (30 g) panko, ½ cup grated zucchini (squeezed dry), ½ cup shredded cheddar, 2 sliced green onions, ½ teaspoon garlic powder and ½ teaspoon salt. Shape into 8 patties and chill for 15 minutes. Pan-fry in 2 tablespoons oil over medium heat for 3 to 4 minutes per side, until golden and crisp. Because they contain raw egg, cook them to 160°F (71°C) in the center. Serve with a salad or in a pita.

7. Cinnamon Breakfast Quinoa

Simmer 1 cup rinsed quinoa with 1 cup (240 ml) milk, 1 cup water, ½ teaspoon cinnamon and a pinch of salt, covered, for 15 minutes, until creamy. Stir in 1 to 2 tablespoons maple syrup and ½ teaspoon vanilla, and top with berries, sliced banana and chopped nuts. It makes a warm, high-protein alternative to oatmeal and reheats well with a splash of milk.

White, Red or Black Quinoa?

  • White quinoa is the mildest and fluffiest. It’s the best all-purpose choice for skillets, bowls and breakfast quinoa.
  • Red quinoa is a little nuttier and holds its shape better, which makes it great for salads.
  • Black quinoa is the firmest and crunchiest, with an earthy flavor. It looks striking in salads and grain bowls.
  • Tricolor quinoa mixes all three for color and texture.

Red and black quinoa can take 2 to 5 minutes longer to cook than white. Taste a few grains before taking the pot off the heat.

Meal Prep With Quinoa

Cook a big batch on the weekend and you’ll have the base for several of these easy quinoa recipes ready to go. Three cups of cooked quinoa (from 1 cup dry) is enough for the Mediterranean salad and two bowls, or for a batch of fried “rice.” Here’s a simple plan:

  1. Sunday: cook 2 cups of dry quinoa (about 6 cups cooked). Spread it on a sheet pan to cool quickly, then refrigerate it in a covered container.
  2. Monday lunch: Mediterranean lemon quinoa salad.
  3. Tuesday dinner: quinoa fried “rice” with eggs and frozen vegetables.
  4. Wednesday: Greek chickpea quinoa bowls.

Freeze any extra in 1- or 2-cup portions so you always have some ready for a quick dinner.

Common Quinoa Mistakes

  • Skipping the rinse when the package doesn’t say “pre-rinsed,” which can leave a bitter taste.
  • Using too much water, which makes it soggy. Stick to 1¾ cups per cup of quinoa.
  • Stirring while it cooks, which breaks the grains and makes them gummy.
  • Serving it unseasoned. A pinch of salt in the water and a squeeze of lemon at the end make a big difference.

Tips for Flavorful Quinoa

  • Cook it in broth instead of water for more savory flavor.
  • Don’t lift the lid while it simmers; the steam finishes the cooking.
  • Season boldly. Quinoa is mild, so dressings, herbs, citrus and spices make the dish.
  • Cool it spread out on a sheet pan if you’re making salad or fried “rice,” so it doesn’t clump or steam.
  • Add crunch with toasted nuts, seeds or roasted chickpeas.

How to Store and Freeze Cooked Quinoa

  • Refrigerate cooked quinoa and quinoa dishes within 2 hours of cooking, in a covered container, and eat them within 3 to 4 days.
  • Freeze plain cooked quinoa flat in freezer bags for up to 2 to 3 months for best quality. Thaw overnight in the fridge or reheat from frozen with a splash of water.
  • Reheat leftovers until steaming hot, 165°F (74°C).

These times follow the FoodSafety.gov cold food storage chart.

Pesto chicken quinoa

Cut 1¼ lb (565 g) boneless skinless chicken breasts into 1-inch (2.5 cm) pieces and season with ½ teaspoon salt and ¼ teaspoon pepper. Cook in 1 tablespoon olive oil in a large skillet over medium-high heat for 6 to 8 minutes, until 165°F (74°C). Turn off the heat and stir in 3 cups warm cooked quinoa, ⅓ cup (85 g) basil pesto, 1 cup halved cherry tomatoes and 2 handfuls of baby spinach until the spinach wilts. Serves 4. For more ways to cook the chicken, see our boneless skinless chicken breast recipes.

Ginger beef and broccoli quinoa

Brown 1 lb (450 g) lean ground beef in a large skillet, breaking it up, until no pink remains and it reaches 160°F (71°C); drain the fat. Add 3 cups (about 210 g) small broccoli florets and ¼ cup (60 ml) water, cover and steam 3 minutes. Stir in a sauce of 3 tablespoons soy sauce, 1 tablespoon brown sugar, 1 tablespoon grated ginger, 2 minced garlic cloves and 1 teaspoon cornstarch, and cook 1 minute until glossy. Spoon over 3 cups hot quinoa. Find more lean ideas in our healthy ground beef recipes.

Other Ways to Cook Quinoa

The stovetop method above is the most reliable, but you can also cook quinoa hands-off and keep these easy quinoa recipes moving on a busy night. Each method uses rinsed quinoa and a pinch of salt.

MethodQuinoa to liquidTimeHow to do it
Electric pressure cooker1 cup to 1¼ cups (300 ml)1 minute at high pressure, then 10 minutes natural releaseLess liquid is needed because almost none evaporates. Fluff and serve.
Oven1 cup to 1¾ cups (420 ml) boiling liquid25 to 30 minutes at 375°F (190°C)Use an 8×8-inch (20×20 cm) dish covered tightly with foil. Handy when the stovetop is full.
Microwave1 cup to 2 cups (480 ml)6 minutes on high, stir, then 3 to 5 minutes moreUse a large microwave-safe bowl, loosely covered, so it doesn’t boil over. Rest 5 minutes.
Pasta method1 cup in 6 cups (1.4 L) boiling salted water12 to 15 minutesDrain in a fine-mesh strainer, return to the pot, cover and rest 10 minutes. Gives very separate grains for salads.

Change the liquid to change the texture

  • 1½ cups (360 ml) per cup: firmer, drier grains for salads and quinoa fried “rice.”
  • 1¾ cups (420 ml) per cup: the all-purpose texture used on this page.
  • 2 cups (480 ml) per cup: soft and creamy, best for breakfast quinoa and patties.

Grain Swaps and Flavored Quinoa

Swap in a different grain

Out of quinoa? Each of these gives about 3 cups cooked from 1 cup dry, enough to replace the cooked quinoa in most of these easy quinoa recipes.

*Bulgur and couscous are made from wheat, so they are not gluten free. The one-pan skillet needs raw quinoa and its own liquid amount, so don’t swap grains there.

Four flavored quinoas (per 1 cup dry)

  • Cilantro-lime: cook in water, then stir in ¼ cup chopped cilantro, 2 tablespoons lime juice, 1 teaspoon lime zest and 1 tablespoon olive oil.
  • Coconut: cook in 1 cup (240 ml) canned coconut milk plus ¾ cup (180 ml) water. Good with salmon.
  • Tomato-cumin: cook in 1 cup (240 ml) broth plus ¾ cup (180 ml) tomato sauce and ½ teaspoon ground cumin.
  • Lemon-herb: cook in chicken or vegetable broth, then stir in 1 tablespoon butter, 1 tablespoon lemon juice, 1 teaspoon lemon zest and 2 tablespoons chopped parsley.

Easy Quinoa Recipe FAQs

Do you have to rinse quinoa?

It’s a good idea. Rinsing removes the bitter natural coating called saponin. Pre-rinsed brands need only a quick rinse or none at all.

Why is my quinoa mushy?

Too much water, or it cooked too long. Use 1¾ cups liquid per cup of quinoa, keep the heat low, and let it rest covered before fluffing.

Is quinoa a grain?

Quinoa is technically a seed, but it’s cooked and eaten like a whole grain, which is why it’s often grouped with them.

Can I cook quinoa in a rice cooker?

Yes. Use the same 1 to 1¾ ratio of quinoa to water and the white rice setting, then let it rest for 5 minutes before fluffing.

How much quinoa should I cook per person?

Plan on about ¼ to ⅓ cup (45 to 55 g) of dry quinoa per person for a side dish, or ½ cup (85 g) dry for a main-dish bowl. Remember that it triples in volume as it cooks.

Is quinoa gluten free?

Quinoa is naturally gluten free. If you need to avoid gluten strictly, choose a brand labeled gluten free to avoid cross-contact during processing.
