Boneless Skinless Chicken Thigh Recipes on the Stove Top (5 Sauces)
These stove-top recipes for boneless skinless chicken thighs all start the same way: thighs seasoned with a simple spice rub and pan-seared until deeply browned and juicy, in about 15 minutes. Then you finish them with one of five quick pan sauces made in the same skillet: garlic butter, honey garlic, creamy Tuscan, mushroom thyme, or chipotle lime. Thighs have more fat than breasts, so they stay tender even if they cook a minute longer than planned.
Below you’ll find the base method step by step, how to tell when thighs are done, the five sauces, tips, and storage. The printable recipe card (garlic butter version) is at the bottom.

Ingredients for Pan-Seared Chicken Thighs
- Boneless, skinless chicken thighs, 2 lb (900 g), about 6 to 8 thighs.
- Spice rub: 1 teaspoon each smoked paprika, garlic powder and dried oregano, ¾ teaspoon salt and ½ teaspoon black pepper.
- Neutral or olive oil, 1 tablespoon.
- Ingredients for one pan sauce (below). The card uses garlic butter: 3 tablespoons butter, 4 garlic cloves, ½ cup chicken broth, 1 tablespoon lemon juice and 2 tablespoons parsley.
How to Pan-Sear Boneless Skinless Chicken Thighs (Step by Step)
1. Trim and dry
Trim any large pieces of fat, unfold the thighs so they lie flat, and pat them very dry with paper towels.
2. Season
Mix the spice rub and sprinkle it over both sides of the thighs.
3. Sear the first side
Heat the oil in a large skillet (cast iron or stainless steel is best) over medium-high heat until it shimmers. Lay the thighs in smooth side down without crowding; use two batches if needed. Cook without moving them for 5 to 6 minutes, until deeply golden and they release easily.
4. Cook the second side
Flip and lower the heat to medium. Cook 4 to 6 minutes more, until the thickest thigh reaches at least 165°F (74°C) on an instant-read thermometer.
5. Rest
Move the thighs to a plate and rest them for 5 minutes while you make the sauce in the same pan.
6. Make the sauce and serve
Make one of the sauces below, then return the thighs and their juices to the pan and spoon the sauce over them.
How to Tell When Chicken Thighs Are Done
All poultry is safe at 165°F (74°C), according to the FoodSafety.gov safe minimum temperature chart. Thighs are forgiving: many cooks take them to 175°F to 185°F (79°C to 85°C), where the connective tissue softens and the meat gets even more tender. Check the thickest part with a thermometer; color alone isn’t a reliable sign.
5 Stove-Top Sauces for Chicken Thighs
Each sauce is made in the same skillet after the thighs come out and makes enough for 2 pounds of chicken. Pour off all but about 1 tablespoon of fat first.
1. Garlic Butter
Over medium heat, melt 3 tablespoons butter and cook 4 minced garlic cloves for 30 seconds. Add ½ cup chicken broth, scrape up the browned bits and simmer 2 minutes. Stir in 1 tablespoon lemon juice and 2 tablespoons chopped parsley. This is the version on the recipe card.
2. Honey Garlic
Cook 3 minced garlic cloves for 30 seconds. Add 3 tablespoons honey, 3 tablespoons low-sodium soy sauce, 2 tablespoons water and 1 tablespoon rice vinegar. Simmer 2 to 3 minutes, until syrupy, then toss the thighs in the glaze and top with sesame seeds and green onions.
3. Creamy Tuscan
Cook 2 minced garlic cloves and ⅓ cup chopped oil-packed sun-dried tomatoes for 1 minute. Add ½ cup broth and ¾ cup heavy cream and simmer 3 minutes. Stir in 2 cups baby spinach until wilted and ⅓ cup grated Parmesan.

4. Mushroom Thyme
Add 1 tablespoon butter and 8 oz (225 g) sliced mushrooms and cook until browned, 6 to 7 minutes. Add 1 minced garlic clove and 1 teaspoon fresh thyme leaves, then ⅔ cup broth, and simmer until reduced by half. Finish with 2 tablespoons sour cream or cream if you like.
5. Chipotle Lime
Cook 2 minced garlic cloves for 30 seconds. Add 1 to 2 minced chipotle peppers in adobo plus 1 tablespoon of the sauce, ½ cup broth and 1 tablespoon honey, and simmer 2 minutes. Squeeze in the juice of 1 lime and finish with chopped cilantro. Great sliced in tacos or rice bowls.
Chef Emma’s Tips
- Dry thighs brown better. Surface moisture turns into steam and stops the crust from forming.
- Leave them alone. If a thigh sticks when you try to flip it, give it another minute.
- Don’t crowd the pan. Leave space between the thighs, or they’ll steam instead of sear.
- Keep the browned bits. The fond in the pan is what flavors every sauce.
- Turn the heat down for sauces with honey or garlic, which burn quickly in a hot pan.
What to Serve With Them
- Rice, couscous or quinoa with greens
- Mashed potatoes or egg noodles (with the mushroom or Tuscan sauce)
- Steamed broccoli, green beans or a crisp salad
- Warm tortillas, slaw and avocado (with the chipotle lime sauce)

Storage and Reheating
- Refrigerate within 2 hours and eat within 3 to 4 days.
- Reheat covered in a skillet over medium-low heat with a splash of broth, or in the microwave, until hot, 165°F (74°C).
- Freeze cooked thighs (without cream sauces, which can separate) for up to 2 to 3 months for best quality. Thaw in the fridge overnight.
These times follow the FoodSafety.gov cold food storage chart. Don’t rinse raw chicken; it spreads bacteria around the sink.
Chicken Thighs on the Stove FAQs
How long do boneless chicken thighs take on the stove?
About 10 to 12 minutes total over medium-high then medium heat: 5 to 6 minutes on the first side and 4 to 6 on the second, until they reach 165°F.
Can I cook them from frozen?
It’s better to thaw them first in the refrigerator so they brown and cook evenly. If they’re frozen in a block, thaw them in cold water in a sealed bag, changing the water every 30 minutes, and cook right away.
Why is my chicken not browning?
The pan wasn’t hot enough, the thighs were wet, or the pan was crowded. Fix all three and you’ll get a golden crust.
Can I use chicken breasts instead?
Yes. Pound them to an even ¾ inch (2 cm) and cook 4 to 5 minutes per side, to 165°F; they dry out faster than thighs, so check early.
